in anticipation of thanksgiving dinner

(bear with me, it’s a bit disjointed, but may be useful)

* exactly how the recording starts. verbatim. it is what it is.

* and about how he does not baste, and he explained all of that. and it’s pretty interesting, and she’s a traditionalist and did not chaaange her ways with the turkey. but he also talked about spatchcocking, and that means butterflying 🦋. a fancy term, i guess.
 i like butterflying be-tter
and she said that yes, she has spatchcocked a chicken. and they talked about spatchcocking and about basting or not basting. alton does not baste because the liquid goes on the skin and the skin is made to not allow anything to penetrate the body.
the stuffing can cause salmonella because if it’s not cooked to 163 degrees the inside of the turkey then does not cook properly. so that was really interesting,
but the lady did not change her ways.
she’s a traditionalist, she bastes, does not brine, and she stuffs the bird. he cooks it outside and then brings it inside while it sits, and he lets it sit for a half hour. he will brine his turkey up to a week, a frozen turkey, on ice, outside. that is quite interesting.

the spatchcocking is what’s really funny
